When you’ve already started harvesting certain things, the objects will have a white outline on them. By holding Shift and selecting each outline, or holding the Left Mouse Button and dragging it to create a green square that covers all of the white outline you want to stop, this will cancel the harvest as the white outline is removed off of the trees and such.
