In order to attach items to a quick slot you will need to use your backpack.

After you lay out your inventory, hover over to your backpack to place it in the middle.

Anything that’s lying around in your inventory can be attached to your backpack just by clicking on it. If you want to quickly switch items go to your backpack then right click to add or remove whatever you need.

Now if you want to get a hold of the items on your quick slot you can just press and hold on your inventory key to whip out your entire bag. Think of this as some sort of radial menu. You can put your water container here or even your meds to make healing and drinking less arduous.
