How To Get Thief
To find the Thief, you will need to be in the town. Facing this direction, continue forward until you reach the gates.
Just before you leave the town, look to your left and there will be a gap that takes you to the back of the buildings. Keep going until you reach the very end.
At the end, you will find the Thief master, an NPC named Boots. Talk to Boots and he will teach you all he knows for you to become a Thief yourself.
