Water Spinach, while sharing similar name to a real-life delicious veggie, doesn’t actually share similar look. Water Spinach looks a lot leafy in Nightingale with wider and thicker leaves.
But they do become easy to find when you take their name literally: Water Spinach grows near bodies of water. They look a little like bloooming cabbage and is common around Swamp biome.
You should find these leafy plants around the water to collect. Their spawn rate is also decent, so it won’t be hard to find them as long as you stick to the water!
Water Spinach and other plants like Mushrooms and Berries are always good to have excess of. You can make salads to increase your stamina and health, especially during early game when you’re a lot more fragile.
